1 cup granulated sugar, plus more if needed1 tablespoon grated fresh ginger1 to 2 jalapeños, seeds and ribs removed, dicedGrated zest and juice of 1 large orange (about ½ cup juice)1 12-ounce bag fresh cranberriesGrated zest of 1 lemon, plus 1 tablespoon fresh lemon juiceKosher salt
1. Combine the sugar, ginger, jalapeños, orange zest and orange juice In a medium saucepan over medium heat. Bring to a simmer and cook 2 minutes. Add the cranberries and cook until they pop, 10 to 20 minutes, stirring frequently and adding water if the mixture appears too dry.
2. Stir in the lemon zest and juice and season with salt or a bit more sugar. Let cool completely.
