This is the night. It’s a beautiful night…to try your hand at the spaghetti and plant-based meatballs served at the Lady and the Tramp-inspired Tony’s Town Square Restaurant at Magic Kingdom Park. Disney Files Magazine is pleased to share the dish’s recipe, as featured in the new book Delicious Disney Walt Disney World: Recipes & Stories from the Most Magical Place on Earth. Written by Pam Brandon, Member Cruise veteran Marcy Carriker Smothers and the Disney Chefs, the multifaceted book is filled with photography, restaurant concept art, inside stories and more than 60 recipes curated from the first 50 years of Walt Disney World Resort.
Serves: 4-6
Ingredients for Spaghetti:
• 1 pound spaghetti noodles
• Basil for garnish (cut chiffonade style
• to be fancy)
Ingredients for Marinara Sauce:
• 1 tablespoon canola oil
• ¼ cup fresh minced garlic
• 1 (29-ounce) can tomato puree
• 1 teaspoon salt
• 1 teaspoon black pepper
• ½ cup chopped fresh basil
Ingredients for Plant-Based Meatballs:
• 12 ounces cremini mushrooms
• 1 pound plant-based ground meat substitute
• 1 tablespoon freshly chopped basil
• 2 teaspoons freshly chopped parsley
• 1 teaspoon fresh minced garlic
• 1 teaspoon coarse salt
• ½ teaspoon black pepper
Sauce Steps:
1. Heat oil in large pan over medium heat for 5 minutes, until simmering. Add garlic and cook for 2 minutes. Add tomato puree, salt and pepper.
2. Simmer for 30 minutes, stirring occasionally. Add basil and simmer for an additional 15 minutes.
3. Keep warm until ready to serve.
“Meat”ball Steps:
1. Preheat oven to 350 degrees Fahrenheit.
2. Clean mushrooms and place in food processor.
3. Pulse until they are the same general consistency as the plant-based meat substitute.
4. In large bowl, mix together meat substitute, mushrooms, basil, parsley, garlic, salt and pepper.
5. Scoop mixture into ¼-cup balls and place on baking sheet.
6. Bake 10-12 minutes or until internal temperature reaches 150 degrees Fahrenheit.
Spaghetti Steps:
1. Cook spaghetti according to package directions.
2. Drain, place on serving plate, top with sauce and meatballs, and garnish with basil chiffonade.
To enjoy fully: Slurp a single noodle with a loved one, meeting in the middle for a doggone good kiss.
