I believe that all of us can agree that elk is at the top of the food chain when it comes to types of antlered game animals.
I stopped in to see my friends at Curated Fine Meats the other day. I was pleasantly surprised when noticed that they carried elk steaks. I picked up a package of elk steaks and on the drive home, I had recipe’s running through my brain. What I formulated in my head was a fusion of flavors that will keep you coming back for more. This is not just a meal; this is a celebration of flavor that will make your taste buds come alive!
Hence the Elk Steak Supreme:
First you start with the basic ingredients – Elk steaks, shitake mushrooms, onion, garlic & bacon. Why bacon? Because bacon makes the world a better place. The first thing that I did was to build a nice fire in my Breeo firepit. Then boil your potatoes to make your mashed potatoes – Please don’t use boxed mashed potato and ruin my creation.
Next, corsley chop your onion, garlic, shitake mushrooms and bacon. Set your cast iron frying pan on the fire. When the frying pan is good & hot, place a generous heaping of butter in the pan. When it is melted and bubbling add in the vegetables and bacon. Sautee those ingredients and when your onion is translucent, sear both sides of the elk steaks on the grill. Then place them into the cast iron frying pan, add a ½ cup of beef stock and cover the frying pan. Bring it to a simmer. Remove the cast iron frying pan from the fire and let it sit for about ten minutes. Do not remove the cover from the frying pan.
Place a generous serving of mashed potatoes on your plate. Slice your elk steak and place it on top of the potato’s. Spoon the veggies, bacon and stock over the elk and potato’s and you are ready for a feast

- ½ Onion
- 3 Garlic Cloves
- Shitake Mushrooms
- 4 Strips of Thick Sliced Bacon
- ½ Cup of Beef Stock
