When it comes to wild game, duck is undoubtedly among my top three favorites to prepare and savor. Last season, I acquired a Camp Chef Smoker, and since then, I have been using it non-stop, perfecting my smoking technique. Traditional wood smokers are great but can be labor-intensive, requiring constant attention to feed the wood and regulate the heat. However, with my new pellet smoker, the Camp Chef, my smoking experience has been transformed. This advanced technology allows me to set up the smoker and go about my day, even regulating it from my cell phone. I’ve even gone to the beach while my smoker did all the work!
Smoked duck is a culinary delight, offering a rich, smoky flavor that tantalizes the taste buds. This recipe fills the room with a spicy aroma, teasing your palate in anticipation of a wonderful blend of flavors. If you are an outdoor cooking enthusiast, this succulent duck will make your mouth water and become a favorite in your repertoire.
- 1 whole duck
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 tablespoon smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cayenne pepper (optional)
- Wood pellets (hickory or applewood recommended)
1. Prep the Duck: Rinse the duck thoroughly and pat dry with paper towels. Trim any excess fat and prick the skin all over with a fork to allow the smoke to penetrate.
2. Seasoning: Rub the duck with olive oil. Mix all the dry ingredients in a bowl and rub the seasoning all over the duck, including the cavity.
3. Smoking Setup: Preheat your Camp Chef Smoker to 225°F. Fill the hopper with wood pellets of your choice. Hickory and applewood work exceptionally well for duck.
4. Smoking: Place the seasoned duck on the smoker rack. Insert a meat thermometer into the thickest part of the breast. Close the lid and smoke until the internal temperature reaches 165°F, usually about 3-4 hours.
5. Rest and Serve: Remove the duck from the smoker and let it rest for 15 minutes before carving. This allows the juices to redistribute, ensuring a moist and flavorful bite.
Tips for the Best Smoked Duck
- Monitor the Temperature: Use a meat thermometer to ensure the duck is perfectly cooked. Overcooking can dry out the meat.
- Pellet Choice: The type of wood pellets you use can significantly impact the flavor. Experiment with different varieties to find your favorite.
- Side Dishes: Pair your smoked duck with roasted vegetables or a fresh green salad to complement the rich, smoky flavor.
Smoked duck is a rewarding and delicious endeavor, especially for those who love the art of outdoor cooking. With the convenience of a Camp Chef Smoker, you can achieve perfect results every time, making your culinary creations a hit at any gathering. Enjoy the process and the delightful flavors that follow!
